Bubble and Squeak


 A really yummy idea for using your Thanksgiving/Christmas turkey leftovers! This only works if you have some fixings (stuffing/mashed potatoes). It's called Bubble and Squeak (we saw a British chef on the Food Network make it around Thanksgiving time). Take your turkey and cut or shred it into smaller pieces, then mix it with leftover dressing/stuffing and mashed potatoes, along with any other yummy ingredients that might blend well (Jon liked his with corn). Form small patties out of the mixture and cook them in a skillet with about 1 ½ tablespoons of oil. You'll see them bubble and hear them squeak when you cook them :)—thus the cute name! Brown both sides and drizzle with either gravy from your previous meal or make a quick "gravy" using chicken or beef broth and crushed cooked corn. It's also good without gravy, just some salt and pepper. My kids loved this, and they won't eat mashed potatoes, so I was pleased when Anna said they were fabulous. She claimed they tasted like French fries (of course, she used ketchup!). Just thought I'd share!

Gather Ingredients:

  • Leftover turkey
  • Stuffing/dressing
  • Mashed potatoes
  • Any additional ingredients (e.g., corn)

Prepare Turkey:

  1. Cut or shred the leftover turkey into smaller pieces.

Mix Ingredients:

  1. In a bowl, combine the turkey, stuffing, mashed potatoes, and any other ingredients.

Form Patties:

  1. Shape the mixture into small patties.

Cook Patties:

  1. Heat 1.5 tablespoons of oil in a skillet over medium heat.
  2. Place the patties in the skillet and cook until browned on both sides.

Enjoy:

  1. Drizzle with gravy (made from chicken or beef broth and crushed corn) or season with salt and pepper.
  2. Serve warm.

Optional:

  • Serve with ketchup for added flavor.

Note: You’ll hear them bubble and squeak as they cook! Enjoy this fun and tasty way to use your leftovers!
