 Ground Sirloin Patties with Roasted Potatoes

Ingredients

  • 8 red potatoes, cut into 4 wedges each
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt, divided
  • 1 1/2 pounds ground sirloin
  • 1 large egg, lightly beaten
  • 1/2 teaspoon ground black pepper
  • 1 medium white onion, sliced
  • 2 (15-oz.) cans fire-roasted diced tomatoes
  • 1 chicken bouillon cube
  • 6 (1-oz.) Swiss cheese slices
  • Chopped fresh basil (optional)

Directions

  1. Preheat the Oven: Set the oven to 425°F.

  2. Prepare the Potatoes: In a bowl, mix the potatoes, olive oil, and 1/2 teaspoon of salt. Spread the mixture on a jelly-roll pan in a single layer. Bake for 35-40 minutes until golden and tender.

  3. Make the Patties: In a large bowl, combine the ground sirloin, egg, black pepper, and 1 teaspoon of salt. Shape the mixture into 6 patties (about 3 1/2 inches wide).

  4. Cook the Patties: Heat a large skillet over medium-high heat. Cook the patties for 4-5 minutes on each side until browned. Remove the patties and set aside, keeping the drippings in the skillet.

  5. Sauté the Onion: In the same skillet, add the sliced onion to the drippings. Sauté for 2 minutes.

  6. Add Tomatoes: Stir in the diced tomatoes, chicken bouillon, and 1/2 cup of water. Cook for 3-4 minutes until the mixture is bubbly.

  7. Combine Patties and Sauce: Return the patties to the skillet. Spoon the tomato mixture over them. Cover and cook for 15 minutes. Then uncover and cook for an additional 5 minutes.

  8. Add Cheese: Place 1 slice of Swiss cheese on each patty. Cover and cook for 3 more minutes.

  9. Serve: Sprinkle with fresh basil if desired. Serve with roasted potatoes.
