Ground Sirloin Patties with Roasted Potatoes

Ingredients
- 8 red potatoes, cut into 4 wedges each
- 2 tablespoons olive oil
- 1 1/2 teaspoons kosher salt, divided
- 1 1/2 pounds ground sirloin
- 1 large egg, lightly beaten
- 1/2 teaspoon ground black pepper
- 1 medium white onion, sliced
- 2 (15-oz.) cans fire-roasted diced tomatoes
- 1 chicken bouillon cube
- 6 (1-oz.) Swiss cheese slices
- Chopped fresh basil (optional)
Directions
Preheat the Oven: Set the oven to 425°F.
Prepare the Potatoes: In a bowl, mix the potatoes, olive oil, and 1/2 teaspoon of salt. Spread the mixture on a jelly-roll pan in a single layer. Bake for 35-40 minutes until golden and tender.
Make the Patties: In a large bowl, combine the ground sirloin, egg, black pepper, and 1 teaspoon of salt. Shape the mixture into 6 patties (about 3 1/2 inches wide).
Cook the Patties: Heat a large skillet over medium-high heat. Cook the patties for 4-5 minutes on each side until browned. Remove the patties and set aside, keeping the drippings in the skillet.
Sauté the Onion: In the same skillet, add the sliced onion to the drippings. Sauté for 2 minutes.
Add Tomatoes: Stir in the diced tomatoes, chicken bouillon, and 1/2 cup of water. Cook for 3-4 minutes until the mixture is bubbly.
Combine Patties and Sauce: Return the patties to the skillet. Spoon the tomato mixture over them. Cover and cook for 15 minutes. Then uncover and cook for an additional 5 minutes.
Add Cheese: Place 1 slice of Swiss cheese on each patty. Cover and cook for 3 more minutes.
Serve: Sprinkle with fresh basil if desired. Serve with roasted potatoes.
