Directions for Making Salmon Fish Cakes
Gather Ingredients:
- ¼ teaspoon sea salt
- ½ teaspoon sea salt (for salting water)
- Freshly ground black pepper (to taste)
- 10 ounces mashed potatoes
- 8-ounce can good-quality salmon
- 2 tablespoons olive oil
- Small bunch of fresh Italian parsley
- 1 tablespoon flour (plus extra for dusting)
- 1 large egg
Prepare Mixture:
- In a bowl, mix the mashed potatoes, salmon, sea salt, black pepper, chopped parsley, flour, and egg until well combined.
Heat Oil:
- Place a large frying pan on medium heat. Add a splash of olive oil.
Cook Fish Cakes:
- Once the oil is hot, shape the mixture into fish cakes and place in the pan.
- Cook for 3 to 4 minutes on each side until crisp and golden.
- If necessary, cook in two batches.
Serve:
- Serve immediately with lemon halves for squeezing over the fish cakes.
Note: Serve with pasta and a side salad.
