Best Ever Turnip Greens
Ingredients:
- 6 strips of bacon
- 1 small onion, chopped
- 2 tablespoons chopped green pepper
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon vinegar
- Dash of Tabasco
- 3 pounds turnip greens, well washed, coarse stems removed
- 1-2 hard boiled eggs
Directions:
- Cut bacon into small pieces and cook in a pan until crisp.
- Remove bacon and drain on paper towels.
- In the same pan, sauté chopped onion and green pepper in the bacon drippings for 5-8 minutes until soft.
- Add sugar, salt, vinegar, Tabasco, and turnip greens to the pan.
- Cook over medium heat for 15 minutes until greens are wilted.
- Reduce heat and continue cooking for 30 minutes, or until greens are tender.
- Garnish with crispy bacon pieces and chopped hard-boiled eggs before serving.
