🧂 Ingredients

Soup Base

  • 3 cups diced potatoes (about 2 large potatoes — use Yukon gold or russet)
    (Potatoes are naturally low FODMAP — safe even in generous portions.)

  • ½ cup green tops of scallions or 2 tbsp chopped chives (replaces onion flavor)

  • 1½ cups water

  • 2–3 low-FODMAP chicken bouillon cubes (Fody, Massel 7’s, or homemade broth without onion/garlic)

  • ½ tsp salt

  • ¼ tsp black pepper

Creamy Mixture

  • 2 cups lactose-free milk, divided
    (e.g., Lactaid or Fairlife lactose-free milk)

  • ½–1 cup lactose-free sour cream (use full-fat for richness)

  • 2 tbsp gluten-free all-purpose flour (or cornstarch if you prefer GF)

Cheese

  • 8 oz Velveeta cheese, cubed (Velveeta is low lactose; tolerated well by most when portioned)
    OR substitute with 8 oz lactose-free cheddar or Colby Jack, shredded

Optional Toppings

  • Crispy bacon bits (check label for no onion/garlic seasoning)

  • Extra shredded cheese

  • Chopped scallion greens or chives


👩‍🍳 Instructions

  1. Cook potatoes:
    In a large saucepan, combine potatoes, scallion greens, water, bouillon, salt, and pepper.
    Cover and cook over medium heat for about 15 minutes, or until potatoes are tender (but not mushy).

  2. Add milk:
    Stir in 1 cup of lactose-free milk and bring back to a gentle simmer.

  3. Make the cream mixture:
    In a small bowl, whisk together flour, remaining 1 cup of milk, and sour cream until smooth.

  4. Thicken the soup:
    Gradually stir the sour cream mixture into the hot soup base.
    Cook over low heat, stirring constantly, until slightly thickened (about 5 minutes). Don’t boil.

  5. Add cheese:
    Stir in Velveeta (or lactose-free cheese) until melted and smooth.

  6. Serve:
    Ladle into bowls and top with bacon bits, extra cheese, or scallion greens if desired.
