 Coconut-Almond Muffins Directions

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 eggs
  • 1 cup sour cream
  • ½ cup melted butter
  • ½ teaspoon almond extract
  • 1 cup flaked coconut
  • ¾ cup mini chocolate chips
  • ¼ cup sliced almonds

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs. Add sour cream, melted butter, and almond extract; mix well.
  4. Pour the wet mixture into the dry ingredients. Stir until combined.
  5. Fold in the coconut and mini chocolate chips.
  6. Line muffin tins with paper liners or grease them well.
  7. Fill each muffin cup with the batter.
  8. Top each muffin with sliced almonds and a sprinkle of sugar.
  9. Bake for 18-20 minutes or until golden brown.
  10. Let cool and enjoy! This recipe makes about 15 muffins.
