Coconut-Almond Muffins Directions
Ingredients:
- 2 cups flour
- 1 cup sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 2 eggs
- 1 cup sour cream
- ½ cup melted butter
- ½ teaspoon almond extract
- 1 cup flaked coconut
- ¾ cup mini chocolate chips
- ¼ cup sliced almonds
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs. Add sour cream, melted butter, and almond extract; mix well.
- Pour the wet mixture into the dry ingredients. Stir until combined.
- Fold in the coconut and mini chocolate chips.
- Line muffin tins with paper liners or grease them well.
- Fill each muffin cup with the batter.
- Top each muffin with sliced almonds and a sprinkle of sugar.
- Bake for 18-20 minutes or until golden brown.
- Let cool and enjoy! This recipe makes about 15 muffins.
