 Tomato, Cucumber, Avocado Salad

Vegetarian • Gluten Free • 12 Minutes to Make • Serves 6

Ingredients:

Produce:

  • 3 Avocados
  • 3 Cucumbers
  • 6 tbsp Red Onion
  • 4.5 cups Tomatoes

Baking & Spices:

  • 8 twists of Black Pepper (from a pepper mill)
  • 6 tbsp Olive Oil
  • 3 tbsp Red Wine Vinegar

Cheese:

  • 12 oz Goat Cheese

Directions:

  1. Prepare the Vegetables:

    • Dice the avocados and cucumbers.
    • Chop the red onion.
    • Cut the tomatoes into bite-sized pieces.
  2. Mix Ingredients:

    • In a large bowl, combine the diced avocados, cucumbers, red onion, and tomatoes.
  3. Add Seasoning:

    • Drizzle olive oil and red wine vinegar over the salad.
    • Add black pepper to taste.
  4. Add Cheese:

    • Crumble the goat cheese on top of the salad.
  5. Toss and Serve:

    • Gently toss all ingredients together.
    • Serve immediately and enjoy!
