Tomato, Cucumber, Avocado Salad
Vegetarian • Gluten Free • 12 Minutes to Make • Serves 6
Ingredients:
Produce:
- 3 Avocados
- 3 Cucumbers
- 6 tbsp Red Onion
- 4.5 cups Tomatoes
Baking & Spices:
- 8 twists of Black Pepper (from a pepper mill)
- 6 tbsp Olive Oil
- 3 tbsp Red Wine Vinegar
Cheese:
- 12 oz Goat Cheese
Directions:
Prepare the Vegetables:
- Dice the avocados and cucumbers.
- Chop the red onion.
- Cut the tomatoes into bite-sized pieces.
Mix Ingredients:
- In a large bowl, combine the diced avocados, cucumbers, red onion, and tomatoes.
Add Seasoning:
- Drizzle olive oil and red wine vinegar over the salad.
- Add black pepper to taste.
Add Cheese:
- Crumble the goat cheese on top of the salad.
Toss and Serve:
- Gently toss all ingredients together.
- Serve immediately and enjoy!
