Peanut Butter Balls


Ingredients for the Peanut Butter Balls:

  • 1 cup icing sugar
  • 1 cup peanut butter
  • 1/2 cup sweetened shredded coconut
  • 1/3 cup butter (melted)
  • 4 cups Rice Krispies cereal

Ingredients for the Chocolate Icing:

  • 3 cups semi-sweet chocolate chips
  • 1/4 cup hot water
  • 1/4 cup butter

Directions:

  1. Prepare Baking Sheet: Line a baking sheet with waxed paper.

  2. Mix Peanut Butter Balls:

    • In a large bowl, combine the icing sugar, peanut butter, shredded coconut, and melted butter. Mix well.
    • Gently fold in the Rice Krispies until fully coated.
    • Form the mixture into 1-inch balls using lightly dampened hands.
    • Refrigerate the balls on the baking sheet for 30 minutes.
  3. Make Chocolate Dip:

    • In a medium saucepan over low heat, melt the chocolate chips, remaining butter, and hot water together.
    • If the mixture is too thick, add 1-2 tablespoons more hot water.
  4. Coat Peanut Butter Balls:

    • Using two forks, dip a couple of peanut butter balls into the chocolate mixture.
    • Roll the balls to coat them in chocolate.
    • Place the coated balls on the waxed paper-lined baking sheet and chill until the chocolate is set.
