Ingredients
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 large eggs, room temperature
- 1 cup sour cream
- 1/2 cup cornmeal
- 1/2 cup flour
- 1/2 cup 2% milk
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 1 can (14-3/4 ounces) cream-style corn
Preheat the Oven: Set the oven to 350°F (175°C).
Mix Butter and Sugar: In a large bowl, cream together 1/2 cup softened butter and 3/4 cup sugar until smooth.
Add Eggs: Beat in 2 large eggs, one at a time, mixing well after each.
Stir in Sour Cream: Add 1 cup of sour cream and mix until fully combined.
Combine Dry Ingredients: In another bowl, mix 1/2 cup cornmeal and 1/2 cup flour.
Add Milk: Gradually stir in 1/2 cup of 2% milk to the butter mixture.
Incorporate Corn: Fold in 1 can of drained whole kernel corn and 1 can of cream-style corn.
Pour into Baking Dish: Transfer the mixture into a greased baking dish.
Bake: Place in the oven and bake for 45-50 minutes, or until golden brown.
Cool and Serve: Allow to cool slightly before serving. Enjoy!
