Zucchini Bread Directions
Ingredients for one 4 x 8 loaf pan:
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 egg
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- 1 1/2 cups finely shredded unpeeled zucchini
- 1/2 cup raisins
Instructions:
- Preheat the oven to 350°F.
- In a bowl, mix together whole wheat flour, all-purpose flour, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, whisk the egg, sugar, vanilla, and melted butter until well combined.
- Stir in the shredded zucchini and raisins to the wet mixture.
- Combine the wet and dry mixtures until just moistened. Do not overmix.
- Pour the batter into a greased 4 x 8 loaf pan.
- Bake for 50 minutes or until a toothpick inserted comes out clean.
- Let the bread cool in the pan for 10 minutes, then turn it out onto a rack to cool completely.
