 Zucchini Bread Directions

Ingredients for one 4 x 8 loaf pan:

  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1 1/2 cups finely shredded unpeeled zucchini
  • 1/2 cup raisins

Instructions:

  1. Preheat the oven to 350°F.
  2. In a bowl, mix together whole wheat flour, all-purpose flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, whisk the egg, sugar, vanilla, and melted butter until well combined.
  4. Stir in the shredded zucchini and raisins to the wet mixture.
  5. Combine the wet and dry mixtures until just moistened. Do not overmix.
  6. Pour the batter into a greased 4 x 8 loaf pan.
  7. Bake for 50 minutes or until a toothpick inserted comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then turn it out onto a rack to cool completely.
