Black Bean Brownies
Gluten-, dairy-, and soy-free
Ingredients:
- 1 (15.5 oz) can black beans, rinsed and drained
- 3 eggs
- 3 tablespoons vegetable oil
- 1/4 cup cocoa powder
- 1 pinch salt
- 1 teaspoon vanilla extract
- 3/4 cup white sugar
- 1 teaspoon instant coffee (optional)
- 1/2 cup milk chocolate chips (optional)
Directions:
- Preheat the oven to 350°F (175°C) and lightly grease an 8x8 square baking dish.
- In a blender, combine black beans, eggs, vegetable oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee. Blend until smooth.
- Pour the mixture into the prepared baking dish. Sprinkle chocolate chips on top, if using.
- Bake for about 30 minutes, or until the top is dry and the edges pull away from the pan.
