 Black Bean Brownies

Gluten-, dairy-, and soy-free

Ingredients:

  • 1 (15.5 oz) can black beans, rinsed and drained
  • 3 eggs
  • 3 tablespoons vegetable oil
  • 1/4 cup cocoa powder
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 3/4 cup white sugar
  • 1 teaspoon instant coffee (optional)
  • 1/2 cup milk chocolate chips (optional)

Directions:

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8x8 square baking dish.
  2. In a blender, combine black beans, eggs, vegetable oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee. Blend until smooth.
  3. Pour the mixture into the prepared baking dish. Sprinkle chocolate chips on top, if using.
  4. Bake for about 30 minutes, or until the top is dry and the edges pull away from the pan.
