 Emma’s Embarrassingly Nutritious Quiche

Ingredients:

Crust:

  1. 2 cups whole wheat flour (because we like our quiche healthy, not just delicious)
  2. 2/3 cup lard (yes, lard—don’t tell your diet!)
  3. 2 tbsp butter (for flavor, because why not?)
  4. 4 tbsp water (to keep things from getting too dry)

Filling:

  1. 4 eggs (the more, the merrier!)
  2. 2 cups grated cheese (cheese is life)
  3. 8 oz cream cheese (because we all need a little creamy goodness)
  4. 1 cup sour cream (sour cream: the secret ingredient to happiness)
  5. 1 red pepper (chopped, not crying)
  6. ½ onion 
  7. 1 large or 2 small tomatoes (chopped)
  8. 6 basil leaves (chopped, because fancy)

Instructions:

  1. Preheat the oven to 375°F .
  2. In a bowl, mix the crust ingredients: whole wheat flour, lard, butter, and water (stir like you mean it!).
  3. Roll out the dough and place it in a 9” pie pan (don’t worry if it looks like a Picasso).
  4. In another bowl, blend the eggs, cream cheese, and sour cream .
  5. Sauté the chopped red pepper, onion, and tomatoes in 1 tablespoon of olive oil (try not to cry from the onions).
  6. Pour the egg mixture into the crust, then add the sautéed vegetables, chopped basil, and grated cheese (layer like you’re building a quiche skyscraper).
  7. Cook in the oven for 30 minutes (the perfect time to dance like nobody's watching).
  8. Serve warm or cold (but let’s be honest, warm is where the magic happens). Enjoy!
