Emma’s Embarrassingly Nutritious Quiche
Ingredients:
Crust:
- 2 cups whole wheat flour (because we like our quiche healthy, not just delicious)
- 2/3 cup lard (yes, lard—don’t tell your diet!)
- 2 tbsp butter (for flavor, because why not?)
- 4 tbsp water (to keep things from getting too dry)
Filling:
- 4 eggs (the more, the merrier!)
- 2 cups grated cheese (cheese is life)
- 8 oz cream cheese (because we all need a little creamy goodness)
- 1 cup sour cream (sour cream: the secret ingredient to happiness)
- 1 red pepper (chopped, not crying)
- ½ onion
- 1 large or 2 small tomatoes (chopped)
- 6 basil leaves (chopped, because fancy)
Instructions:
- Preheat the oven to 375°F .
- In a bowl, mix the crust ingredients: whole wheat flour, lard, butter, and water (stir like you mean it!).
- Roll out the dough and place it in a 9” pie pan (don’t worry if it looks like a Picasso).
- In another bowl, blend the eggs, cream cheese, and sour cream .
- Sauté the chopped red pepper, onion, and tomatoes in 1 tablespoon of olive oil (try not to cry from the onions).
- Pour the egg mixture into the crust, then add the sautéed vegetables, chopped basil, and grated cheese (layer like you’re building a quiche skyscraper).
- Cook in the oven for 30 minutes (the perfect time to dance like nobody's watching).
- Serve warm or cold (but let’s be honest, warm is where the magic happens). Enjoy!
