 Sweet and Sour Meatballs Recipe

Make-Ahead Meatballs

Ingredients:

  • 1 egg
  • 1/2 cup dry bread crumbs
  • 1/8 cup finely chopped onion
  • 1/4 tablespoon salt
  • 1/2 teaspoon Worcestershire sauce
  • 1/8 teaspoon white pepper
  • 1 lb lean ground beef

Instructions:

  1. In a bowl, combine all ingredients by hand, mixing with care.
  2. Shape the mixture into 1-inch balls, putting love into each one.
  3. Place the meatballs in a single layer on an ungreased cookie sheet.
  4. Bake at 400°F for 10-15 minutes, turning often, until no longer pink.
  5. Cool the meatballs. They can be frozen for up to 3 months, ready to share later.

Sweet and Sour Meatballs

Ingredients:

  • 1 (20 oz) can of pineapple chunks
  • 1/3 cup water
  • 3 tablespoons vinegar
  • 1 tablespoon soy sauce
  • 1/2 cup packed brown sugar
  • 3 tablespoons cornstarch
  • 1 batch of make-ahead meatballs (from above)
  • 1 large green pepper, cut into 1-inch pieces
  • Hot cooked rice

Instructions:

  1. Drain the pineapple, reserving the juice. Set the pineapple aside with a smile.
  2. If needed, add water to the juice to measure 1 cup.
  3. Pour the juice mixture into a large skillet.
  4. Add 1/3 cup water, vinegar, soy sauce, brown sugar, and cornstarch to the skillet, stirring gently.
  5. Cook over medium heat, stirring constantly, until thick—this step takes patience!
  6. Add the reserved pineapple, meatballs, and green pepper to the skillet.
  7. Simmer uncovered for 20 minutes or until heated through, allowing the flavors to blend beautifully.
  8. Serve over hot cooked rice, sharing with kindness.

Makes 6 servings. Enjoy your meal together!
