Sweet and Sour Meatballs Recipe

Make-Ahead Meatballs
Ingredients:
- 1 egg
- 1/2 cup dry bread crumbs
- 1/8 cup finely chopped onion
- 1/4 tablespoon salt
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon white pepper
- 1 lb lean ground beef
Instructions:
- In a bowl, combine all ingredients by hand, mixing with care.
- Shape the mixture into 1-inch balls, putting love into each one.
- Place the meatballs in a single layer on an ungreased cookie sheet.
- Bake at 400°F for 10-15 minutes, turning often, until no longer pink.
- Cool the meatballs. They can be frozen for up to 3 months, ready to share later.
Sweet and Sour Meatballs
Ingredients:
- 1 (20 oz) can of pineapple chunks
- 1/3 cup water
- 3 tablespoons vinegar
- 1 tablespoon soy sauce
- 1/2 cup packed brown sugar
- 3 tablespoons cornstarch
- 1 batch of make-ahead meatballs (from above)
- 1 large green pepper, cut into 1-inch pieces
- Hot cooked rice
Instructions:
- Drain the pineapple, reserving the juice. Set the pineapple aside with a smile.
- If needed, add water to the juice to measure 1 cup.
- Pour the juice mixture into a large skillet.
- Add 1/3 cup water, vinegar, soy sauce, brown sugar, and cornstarch to the skillet, stirring gently.
- Cook over medium heat, stirring constantly, until thick—this step takes patience!
- Add the reserved pineapple, meatballs, and green pepper to the skillet.
- Simmer uncovered for 20 minutes or until heated through, allowing the flavors to blend beautifully.
- Serve over hot cooked rice, sharing with kindness.
