coconut chocolate chip cookies

 Ingredients:

  • 1 cup unsalted butter (at room temp)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup sweetened shredded coconut

Instructions:

  1. Preheat your oven to 350°F.
  2. In a mixer, cream together the butter, brown sugar, and white sugar.
  3. Add the eggs and vanilla extract. Scrape down the sides of the bowl.
  4. Add the flour, salt, baking soda, and baking powder. Mix on low until combined.
  5. Stir in the chocolate chips and shredded coconut.
  6. Cover the dough with plastic wrap and refrigerate for at least 2 hours.
  7. Scoop out 2-3 tablespoons of dough and roll into a ball.
  8. Place about 12 cookie balls on a parchment-lined baking sheet.
  9. Bake for 9-10 minutes until edges are slightly golden and centers are soft.
  10. Remove from the oven and let cookies rest for 5 minutes before transferring to a cooling rack.
  11. Repeat with remaining dough.
