I didn't eat pecan pie until I came to the U.S. In 1987-1989, it was on every diner's menu. I would always order a tuna sandwich for my meal and a pecan pie for dessert.
Here is a recipe to make one using honey:
Ingredients
Crust:
- 1 3/4 cups all-purpose flour
- 3/4 cup butter, softened
- 1/3 cup sugar
- 1/3 cup coarsely chopped pecans
Filling:
- 1 1/2 cups honey
- 2/3 cup firmly packed brown sugar
- 4 eggs
- 6 tablespoons all-purpose flour
- 2 teaspoons vanilla
- 1 teaspoon salt
- 1 1/2 cups coarsely chopped pecans
Directions
- Preheat the oven to 350°F.
- In a bowl, combine 1 3/4 cups flour, softened butter, and sugar. Beat at medium speed until coarse crumbs form. Stir in 1/3 cup chopped pecans.
- Press the crust mixture evenly into the bottom of an ungreased 13x9-inch baking pan.
- Bake the crust for 18-22 minutes until the edges are light golden brown.
- In a separate bowl, mix all filling ingredients (except 1 1/2 cups pecans) thoroughly. Stir in the chopped pecans.
- Spread the filling evenly over the hot, partially baked crust.
- Bake for an additional 30-35 minutes until the filling is set and a knife inserted 1 inch from the edge comes out clean.
- Allow to cool completely, then refrigerate. Cut into bars.
