Parmesan Courgettes with Lemon
Ingredients:
- 500 g small courgettes
- 1 teaspoon olive oil
- 1 teaspoon grated lemon peel
- 2 tablespoons grated Parmesan cheese
- 1/4 teaspoon freshly ground black pepper
Directions:
- Cut each courgette into thick batons.
- Heat the olive oil in a pan over medium heat.
- Add the courgettes and grated lemon peel to the pan.
- Sauté for about 3 minutes, stirring frequently, until the courgettes are lightly browned.
- Mix in the Parmesan cheese and black pepper to taste.
