Parmesan Courgettes with Lemon

Ingredients:

  • 500 g small courgettes
  • 1 teaspoon olive oil
  • 1 teaspoon grated lemon peel
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon freshly ground black pepper

Directions:

  1. Cut each courgette into thick batons.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the courgettes and grated lemon peel to the pan.
  4. Sauté for about 3 minutes, stirring frequently, until the courgettes are lightly browned.
  5. Mix in the Parmesan cheese and black pepper to taste.
