I wanted to share the recipe for the Chocolate Covered Cherry Cake I brought to Danielle's on Sunday. I know a few of you had asked for the recipe.
Cake Instructions
Ingredients:
- 1 pkg devil's food cake mix
- 1 can (21 oz) cherry pie filling
- 2 eggs
- 1 tsp almond extract
Frosting Ingredients:
- 1 cup sugar
- 1/3 cup butter
- 1/3 cup whole milk
- 1 cup semi-sweet chocolate chips (add more for extra chocolate flavor)
Steps:
Preheat Oven: Heat the oven to 350°F.
Mix Cake Ingredients:
- In a bowl, combine the cake mix, cherry pie filling, eggs, and almond extract.
- Mix on low speed for 1 minute until combined.
- Increase speed to medium and mix for 1-2 minutes until smooth.
Bake the Cake:
- Pour the batter into a 9x13 inch pan.
- Bake for 30-35 minutes, or until the cake springs back when lightly touched.
Prepare Frosting:
- In a saucepan over medium-low heat, combine sugar, butter, and milk.
- Stir constantly until it boils. Allow it to boil for 1 minute while stirring.
- Remove from heat and add chocolate chips. Mix until well combined.
Frost the Cake:
- Pour the frosting over the baked cake.
- Use a spatula to spread it evenly.
- Work quickly, as the frosting will start to solidify.
