Chocolate Covered Cherry Cake

 I wanted to share the recipe for the Chocolate Covered Cherry Cake I brought to Danielle's on Sunday.  I know a few of you had asked for the recipe.

 

Cake Instructions

Ingredients:

  • 1 pkg devil's food cake mix
  • 1 can (21 oz) cherry pie filling
  • 2 eggs
  • 1 tsp almond extract

Frosting Ingredients:

  • 1 cup sugar
  • 1/3 cup butter
  • 1/3 cup whole milk
  • 1 cup semi-sweet chocolate chips (add more for extra chocolate flavor)

Steps:

  1. Preheat Oven: Heat the oven to 350°F.

  2. Mix Cake Ingredients:

    • In a bowl, combine the cake mix, cherry pie filling, eggs, and almond extract.
    • Mix on low speed for 1 minute until combined.
    • Increase speed to medium and mix for 1-2 minutes until smooth.
  3. Bake the Cake:

    • Pour the batter into a 9x13 inch pan.
    • Bake for 30-35 minutes, or until the cake springs back when lightly touched.
  4. Prepare Frosting:

    • In a saucepan over medium-low heat, combine sugar, butter, and milk.
    • Stir constantly until it boils. Allow it to boil for 1 minute while stirring.
    • Remove from heat and add chocolate chips. Mix until well combined.
  5. Frost the Cake:

    • Pour the frosting over the baked cake.
    • Use a spatula to spread it evenly.
    • Work quickly, as the frosting will start to solidify.
