Cheesecake Cookies

 Cheesecake Cookies Recipe (16 Servings)

Ingredients:

  • 5 tbsp Butter, softened
  • 1 cup Flour
  • 1 package (8 oz) Cream cheese, softened
  • 2 tbsp Milk
  • 1/2 tsp Vanilla
  • 1/3 cup Brown sugar, packed
  • 1/2 cup Sugar
  • 1 Egg
  • 1 tbsp Lemon juice

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, blend the softened butter, brown sugar, and flour using a fork until the mixture looks like coarse crumbs.
  3. Set aside 1 cup of this mixture for topping.
  4. Press the remaining mixture into an 8x8x2 inch baking dish.
  5. Bake the crust for 15 minutes.
  6. In another bowl, mix the sugar and softened cream cheese until smooth.
  7. Beat in the egg, milk, lemon juice, and vanilla until well combined.
  8. Spread this cream cheese mixture over the baked crust.
  9. Sprinkle the reserved crumb mixture on top.
  10. Bake for an additional 25 minutes.
  11. Allow to cool, then chill in the refrigerator for at least 1 hour.
  12. Cut into 16 squares and serve.
