Cheesecake Cookies Recipe (16 Servings)
Ingredients:
- 5 tbsp Butter, softened
- 1 cup Flour
- 1 package (8 oz) Cream cheese, softened
- 2 tbsp Milk
- 1/2 tsp Vanilla
- 1/3 cup Brown sugar, packed
- 1/2 cup Sugar
- 1 Egg
- 1 tbsp Lemon juice
Instructions:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, blend the softened butter, brown sugar, and flour using a fork until the mixture looks like coarse crumbs.
- Set aside 1 cup of this mixture for topping.
- Press the remaining mixture into an 8x8x2 inch baking dish.
- Bake the crust for 15 minutes.
- In another bowl, mix the sugar and softened cream cheese until smooth.
- Beat in the egg, milk, lemon juice, and vanilla until well combined.
- Spread this cream cheese mixture over the baked crust.
- Sprinkle the reserved crumb mixture on top.
- Bake for an additional 25 minutes.
- Allow to cool, then chill in the refrigerator for at least 1 hour.
- Cut into 16 squares and serve.
