coconut chocolate chip cookies

 Ingredients:

  • 1 cup unsalted butter (at room temp)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • 1 cup sweetened shredded coconut

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixer, cream together the butter, brown sugar, and white sugar.
  3. Add the eggs and vanilla extract; scrape the sides of the bowl.
  4. Add the flour, salt, baking soda, and baking powder. Mix on low until combined.
  5. Stir in the chocolate chips and shredded coconut.
  6. Cover the dough with plastic wrap and refrigerate for at least 2 hours.
  7. Scoop 2-3 tablespoons of dough and roll it into a ball.
  8. Place the balls on a parchment-lined baking sheet (about 12 per sheet).
  9. Bake for 9-10 minutes, until edges are slightly golden and centers are soft.
  10. Remove from the oven and let the cookies rest for 5 minutes.
  11. Transfer cookies to a cooling rack and repeat with remaining dough.
