Ingredients:
- 1 cup unsalted butter (at room temp)
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup chocolate chips
- 1 cup sweetened shredded coconut
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixer, cream together the butter, brown sugar, and white sugar.
- Add the eggs and vanilla extract; scrape the sides of the bowl.
- Add the flour, salt, baking soda, and baking powder. Mix on low until combined.
- Stir in the chocolate chips and shredded coconut.
- Cover the dough with plastic wrap and refrigerate for at least 2 hours.
- Scoop 2-3 tablespoons of dough and roll it into a ball.
- Place the balls on a parchment-lined baking sheet (about 12 per sheet).
- Bake for 9-10 minutes, until edges are slightly golden and centers are soft.
- Remove from the oven and let the cookies rest for 5 minutes.
- Transfer cookies to a cooling rack and repeat with remaining dough.
