Ingredients:
- 1 cup fat-free canned refried beans
- 1 Tbsp taco seasoning mix
- 3/4 cup reduced-fat sour cream
- 3/4 cup store-bought guacamole
- 1 cup fat-free salsa (chunky variety or pico de gallo)
- 1/2 cup low-fat shredded cheddar cheese
- 1/2 cup sweet red peppers (chopped)
- 1/2 cup uncooked scallions (chopped)
- 1/4 cup cilantro (chopped)
Instructions:
- In a small bowl, mix the refried beans and taco seasoning.
- Gather eight 9-oz plastic cups (or small glass bowls).
- In each cup, layer the ingredients as follows:
- 2 tablespoons of the bean mixture
- 1 1/2 tablespoons of sour cream
- 1 1/2 tablespoons of guacamole
- 2 tablespoons of salsa
- 1 tablespoon of shredded cheese
- 1 tablespoon of chopped red peppers
- 1 tablespoon of chopped scallions
- Garnish with cilantro.
- Refrigerate the cups until ready to serve.
