Mexican Vegetable Dip Recipe

Serves: 8

Ingredients:

  • 1 cup fat-free canned refried beans
  • 1 Tbsp taco seasoning mix
  • 3/4 cup reduced-fat sour cream
  • 3/4 cup store-bought guacamole
  • 1 cup fat-free salsa (chunky variety or pico de gallo)
  • 1/2 cup low-fat shredded cheddar cheese
  • 1/2 cup sweet red peppers (chopped)
  • 1/2 cup uncooked scallions (chopped)
  • 1/4 cup cilantro (chopped)

Instructions:

  1. In a small bowl, mix the refried beans and taco seasoning.
  2. Gather eight 9-oz plastic cups (or small glass bowls).
  3. In each cup, layer the ingredients as follows:
    • 2 tablespoons of the bean mixture
    • 1 1/2 tablespoons of sour cream
    • 1 1/2 tablespoons of guacamole
    • 2 tablespoons of salsa
    • 1 tablespoon of shredded cheese
    • 1 tablespoon of chopped red peppers
    • 1 tablespoon of chopped scallions
    • Garnish with cilantro.
  4. Refrigerate the cups until ready to serve.
