🥓 Crustless Spinach, Goat Cheese & Bacon Quiche
Ingredients

8 large eggs

1 cup lactose-free milk (or regular milk + Lactaid)

¾ cup goat cheese, crumbled
-
2 cups baby spinach (or 1 cup frozen, thawed, and drained)

1 package bacon
-
1 cup chopped green tops of scallions (green parts only)

1 tbsp garlic-infused olive oil (FODMAP-safe)

Salt & pepper, to taste
Instructions
-
Preheat oven to 375°F (190°C). Grease a 9×13" baking dish.

In a skillet, heat garlic-infused oil and sauté scallion tops and spinach until wilted. Remove from heat.

Cook the bacon until crispy. Drain and crumble.

In a large bowl, whisk together the eggs, milk, salt, and pepper.
-
Layer the bacon in the prepared dish, covering the bottom evenly.

Pour in half of the egg mixture.
-
Add dollops of the goat cheese and the spinach mixture.
-
Pour the remaining egg mixture over the top.
-
Bake for 30–35 minutes, until set and lightly golden.

Let cool for 5–10 minutes before slicing and serving.
