Crustless Spinach, Goat Cheese & Bacon Quiche





🥓 Crustless Spinach, Goat Cheese & Bacon Quiche

Ingredients

  • 8 large eggs

  • 1 cup lactose-free milk (or regular milk + Lactaid)

  • ¾ cup goat cheese, crumbled

  • 2 cups baby spinach (or 1 cup frozen, thawed, and drained)

  • 1 package bacon

  • 1 cup chopped green tops of scallions (green parts only)

  • 1 tbsp garlic-infused olive oil (FODMAP-safe)

  • Salt & pepper, to taste


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13" baking dish.

  2. In a skillet, heat garlic-infused oil and sauté scallion tops and spinach until wilted. Remove from heat.

  3. Cook the bacon until crispy. Drain and crumble.

  4. In a large bowl, whisk together the eggs, milk, salt, and pepper.

  5. Layer the bacon in the prepared dish, covering the bottom evenly.

  6. Pour in half of the egg mixture.

  7. Add dollops of the goat cheese and the spinach mixture.

  8. Pour the remaining egg mixture over the top.

  9. Bake for 30–35 minutes, until set and lightly golden.

  10. Let cool for 5–10 minutes before slicing and serving.
