 I am excited to bake today!  I have found some recipes on line 

Apple Cinnamon Yogurt Oat Bake
(or, if you want it extra breakfast-square coded: Apple Cinnamon Oat Breakfast Slice)

Ingredients (American measures)
• ½ cup rolled oats (about 50 g)
• 1 cup finely chopped apple (about 150 g, roughly 1 medium apple)
• ⅔ cup Greek yogurt (about 150 g)
• 2 large eggs
• 1 teaspoon cinnamon
• 1 teaspoon brown sugar

Instructions (American oven temp)
Preheat oven to 400°F.
Mix all ingredients until well combined.
Pour into a small greased baking dish or loaf tin.
Bake for 25 minutes, until set and lightly golden.

Notes for accuracy
• This will be firm and sliceable, not creamy
• Greek yogurt is important for structure
• If your apples are very juicy, a slightly longer bake (5 more minutes) helps


Cottage cheese bread: cottage cheese, flour and eggs

Cottage Cheese Quick Bread (Sliceable Loaf)

Ingredients
• 1 cup cottage cheese
• 2 large eggs
• 1½ cups all-purpose flour
• 1½ teaspoons baking powder
• ½ teaspoon salt

(These two additions are what make it bread-like instead of flat. Without them, structure just isn’t possible.)

Instructions

Heat oven to 350°F.
Grease or line a standard loaf pan (8½×4½).

Blend for structure.
Blend the cottage cheese and eggs until completely smooth. This creates a protein-rich base that sets like a crumb instead of curds.

Make the batter.
Pour the mixture into a bowl. Stir in flour, baking powder, and salt. Mix just until combined. The batter should be thick, scoopable, and mound slightly.

Bake.
Pour into the loaf pan and smooth the top.
Bake 40–50 minutes, until:
• the top is lightly golden
• a toothpick comes out clean
• the loaf pulls slightly from the sides

Cool before slicing.
Let it cool in the pan 10 minutes, then turn out and cool another 15 minutes. Cutting too early makes it gummy.

• Soft, dense, and sliceable
• Mild and slightly tangy
• Toasts beautifully
• Holds butter, avocado, or sandwich fillings

Peanut Butter Yogurt Cream (5-Minute Dessert)

This is the one you make when you want dessert without ceremony.

Ingredients
• 1 cup plain Greek yogurt
• ¼ cup peanut butter
• 2–3 tablespoons honey or maple syrup
• ½ teaspoon vanilla (optional)
• Pinch of salt

Instructions
Stir everything together until smooth and glossy. Taste and adjust sweetness. Chill for 10 minutes if you want it thicker, or eat immediately.

Texture
Creamy, mousse-like, spoonable.
