 Cucumber Salad

  1. Prepare Cucumbers: Peel and quarter 1-2 large cucumbers (or 4-5 lemon cucumbers) lengthwise. Then, slice them crosswise into bite-sized pieces.

  2. Chop Herbs: If using fresh dill, basil, or Thai basil, chop 1-2 tablespoons. For basil, stack the leaves, roll them like a cigar, and slice thinly.

  3. Mix Ingredients: In a bowl, combine the sliced cucumbers, chopped herbs, and 2-3 tablespoons of seasoned rice vinegar.

  4. Season: Add salt and pepper to taste.

  5. Serve: Toss everything together and enjoy your salad!
