Salsa Mac And Cheese

 INGREDIENTS

  • Cubed chicken
  • 1 tablespoon butter
  • 1/8 cup all-purpose flour
  • 1 cup milk
  • 3/4 cup favorite salsa
  • 1 cup shredded cheddar cheese
  • Salt
  • 1/2 pound dried pasta

INSTRUCTIONS

  1. Pour 2 quarts of water into a large pot. Cover and set over high heat.
  2. In a medium saucepan, melt the butter over medium heat.
  3. Stir in the flour and whisk for about 2 minutes, until the mixture turns deep golden.
  4. Gradually add the milk, whisking constantly until the mixture thickens and boils (about 4-5 minutes).
  5. Stir in the salsa, remove from heat, and add the cheese. Stir until melted.
  6. Taste and season with salt (about 1 1/2 teaspoons). Cover to keep warm.
  7. Once the water boils, add the dried pasta. Stir to prevent sticking and boil for about 10 minutes until al dente.
  8. Drain the pasta and mix it with the salsa cheese sauce until well coated.
  9. Enjoy your meal!
