INGREDIENTS
- Cubed chicken
- 1 tablespoon butter
- 1/8 cup all-purpose flour
- 1 cup milk
- 3/4 cup favorite salsa
- 1 cup shredded cheddar cheese
- Salt
- 1/2 pound dried pasta
INSTRUCTIONS
- Pour 2 quarts of water into a large pot. Cover and set over high heat.
- In a medium saucepan, melt the butter over medium heat.
- Stir in the flour and whisk for about 2 minutes, until the mixture turns deep golden.
- Gradually add the milk, whisking constantly until the mixture thickens and boils (about 4-5 minutes).
- Stir in the salsa, remove from heat, and add the cheese. Stir until melted.
- Taste and season with salt (about 1 1/2 teaspoons). Cover to keep warm.
- Once the water boils, add the dried pasta. Stir to prevent sticking and boil for about 10 minutes until al dente.
- Drain the pasta and mix it with the salsa cheese sauce until well coated.
