Carrot Puff

Ingredients:

  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 1/2 cup (1 stick) butter, melted
  • 3 eggs
  • 1 cup sugar
  • 3 tablespoons all-purpose (AP) flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8-inch square baking dish.
  3. Place carrots in a medium saucepan and cover with salted water.
  4. Bring water to a boil.
  5. Reduce heat and simmer uncovered for 20 minutes or until carrots are tender.
  6. Drain the carrots.
  7. In a food processor or blender, combine melted butter, eggs, sugar, flour, baking powder, and vanilla.
  8. Gradually add the drained carrots and puree until smooth.
  9. Pour the mixture into the prepared baking dish.
  10. Bake for 45 minutes or until firm.
  11. Let stand for 5 minutes before serving.
