Ingredients:
- 1 pound carrots, peeled and cut into 1-inch pieces
- 1/2 cup (1 stick) butter, melted
- 3 eggs
- 1 cup sugar
- 3 tablespoons all-purpose (AP) flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease an 8-inch square baking dish.
- Place carrots in a medium saucepan and cover with salted water.
- Bring water to a boil.
- Reduce heat and simmer uncovered for 20 minutes or until carrots are tender.
- Drain the carrots.
- In a food processor or blender, combine melted butter, eggs, sugar, flour, baking powder, and vanilla.
- Gradually add the drained carrots and puree until smooth.
- Pour the mixture into the prepared baking dish.
- Bake for 45 minutes or until firm.
- Let stand for 5 minutes before serving.
