Banana-Oatmeal Bread Directions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together 1 cup packed brown sugar, 7 tablespoons vegetable oil, 2 large egg whites, and 1 large egg. Beat well at medium speed.
- In another bowl, combine 1 1/3 cups mashed ripe bananas (about 2 large), 1 cup regular oats, and 1/2 cup fat-free milk. Add this mixture to the sugar mixture and beat well.
- Lightly spoon 2 cups all-purpose flour into dry measuring cups and level with a knife. In a separate bowl, combine the flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon ground cinnamon. Stir with a whisk.
- Add the dry mixture to the sugar mixture and beat just until moist.
- Spoon the batter into a 9 x 5-inch loaf pan coated with cooking spray.
- Bake in the preheated oven for 1 hour and 10 minutes, or until a wooden pick inserted in the center comes out clean.
- Cool in the pan for 10 minutes on a wire rack, then remove from the pan.
- Allow to cool completely on the wire rack before serving.
