Low FODMAP Sausage and Green Beans

Ingredients

4 sausages (kielbasa, chicken, or pork; check for no garlic or onion in the ingredients)

1 can (14–15 oz) green beans, drained and rinsed (or use fresh green beans, chopped)

1 lb (450 g) new potatoes, halved or quartered

2–3 cups low FODMAP chicken broth (check label: no onion/garlic)

Salt and pepper, to taste
Instructions

Prepare ingredients:
Halve or quarter the new potatoes. Drain and rinse green beans if using canned. -
Combine in pot:
In a large pot, place sausages, potatoes, green beans, and chicken broth. The liquid should just cover the ingredients. -
Cook:
Bring to a boil over medium-high heat, then reduce heat to a simmer. Cook 30 minutes, or until potatoes are tender and sausages are fully cooked. -
Season and serve:
Taste and adjust with salt and pepper. Slice sausages if desired before serving.
