Servings: 4
Prep Time: 5 minutes
Cook Time: 30 minutes

Ingredients

  • 4 sausages (kielbasa, chicken, or pork; check for no garlic or onion in the ingredients)

  • 1 can (14–15 oz) green beans, drained and rinsed (or use fresh green beans, chopped)

  • 1 lb (450 g) new potatoes, halved or quartered

  • 2–3 cups low FODMAP chicken broth (check label: no onion/garlic)

  • Salt and pepper, to taste

Instructions

  1. Prepare ingredients:
Halve or quarter the new potatoes. Drain and rinse green beans if using canned.

  2. Combine in pot:
In a large pot, place sausages, potatoes, green beans, and chicken broth. The liquid should just cover the ingredients.

  3. Cook:
Bring to a boil over medium-high heat, then reduce heat to a simmer. Cook 30 minutes, or until potatoes are tender and sausages are fully cooked.
