Sheet Pan Shrimp Fajitas Directions

Ingredients:

  • 1 1/2 pounds shrimp, peeled and deveined
  • 1 yellow bell pepper, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 orange bell pepper, sliced thin
  • 1 small red onion, sliced thin
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • Several turns of freshly ground pepper
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 lime
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 450°F (232°C).
  2. In a large bowl, combine sliced onion, bell peppers, shrimp, olive oil, salt, pepper, and spices. Toss to mix well.
  3. Spray a baking sheet with non-stick cooking spray.
  4. Spread the shrimp and vegetable mixture evenly on the baking sheet.
  5. Bake at 450°F for 8 minutes.
  6. Turn the oven to broil and cook for an additional 2 minutes, or until shrimp is cooked through.
  7. Squeeze fresh lime juice over the fajita mixture and garnish with cilantro.
