Potato Crust Directions
Gather Ingredients:
- 2 firmly-packed sliced raw potatoes
- 1/2 teaspoon salt
- 1 beaten egg
- Vegetable oil
Preheat Oven:
- Set oven to 400°F.
Prepare Pie Pan:
- Oil a 9-inch pie pan.
Salt Potatoes:
- Place sliced raw potatoes in a colander.
- Sprinkle with salt and let sit for 10 minutes.
Remove Excess Water:
- Squeeze out excess water from the potatoes.
Mix Ingredients:
- In a medium bowl, combine the potatoes, beaten egg, and onion.
Form Crust:
- Pat the potato mixture into the prepared pie pan, building up the sides evenly with lightly floured fingers.
Bake:
- Bake for 35 to 40 minutes until the crust is golden brown.
- After 20 minutes, brush the crust with vegetable oil to crisp it.
Adjust Temperature:
- Remove from the oven and reduce the temperature to 375°F.
