 Potato Crust Directions

  1. Gather Ingredients:

    • 2 firmly-packed sliced raw potatoes
    • 1/2 teaspoon salt
    • 1 beaten egg
    • Vegetable oil
  2. Preheat Oven:

    • Set oven to 400°F.
  3. Prepare Pie Pan:

    • Oil a 9-inch pie pan.
  4. Salt Potatoes:

    • Place sliced raw potatoes in a colander.
    • Sprinkle with salt and let sit for 10 minutes.
  5. Remove Excess Water:

    • Squeeze out excess water from the potatoes.
  6. Mix Ingredients:

    • In a medium bowl, combine the potatoes, beaten egg, and onion.
  7. Form Crust:

    • Pat the potato mixture into the prepared pie pan, building up the sides evenly with lightly floured fingers.
  8. Bake:

    • Bake for 35 to 40 minutes until the crust is golden brown.
    • After 20 minutes, brush the crust with vegetable oil to crisp it.
  9. Adjust Temperature:

    • Remove from the oven and reduce the temperature to 375°F.
