 Golden Mozzarella Courgettes

Serves 2

Ingredients:

  • 4-6 round courgettes (tops sliced off)
  • 2 tablespoons olive oil
  • 1 small onion (chopped)
  • 3 medium garlic cloves (minced)
  • 2 handfuls chopped tomatoes (or cooked mushrooms)
  • 3 large handfuls cubed or shredded mozzarella
  • 1 handful chopped fresh parsley
  • Salt and pepper (to taste)

Instructions:

  1. Preheat the oven to 190°C (375°F) or gas mark 5.
  2. Scoop out the center of each courgette to create a shell. Chop the removed flesh.
  3. In a frying pan, heat the olive oil over medium heat.
  4. Sauté the chopped onion, minced garlic, and chopped courgette flesh until tender.
  5. Remove from heat and add mozzarella, tomatoes (or mushrooms), and parsley. Season with salt and pepper.
  6. Stuff the courgette shells with the mixture.
  7. Place the stuffed courgettes in a baking dish.
  8. Bake for 45 minutes, or until the courgettes are tender and the cheese is golden.
  9. Serve warm or at room temperature on a bed of greens or with mashed potatoes.
