Golden Mozzarella Courgettes
Serves 2
Ingredients:
- 4-6 round courgettes (tops sliced off)
- 2 tablespoons olive oil
- 1 small onion (chopped)
- 3 medium garlic cloves (minced)
- 2 handfuls chopped tomatoes (or cooked mushrooms)
- 3 large handfuls cubed or shredded mozzarella
- 1 handful chopped fresh parsley
- Salt and pepper (to taste)
Instructions:
- Preheat the oven to 190°C (375°F) or gas mark 5.
- Scoop out the center of each courgette to create a shell. Chop the removed flesh.
- In a frying pan, heat the olive oil over medium heat.
- Sauté the chopped onion, minced garlic, and chopped courgette flesh until tender.
- Remove from heat and add mozzarella, tomatoes (or mushrooms), and parsley. Season with salt and pepper.
- Stuff the courgette shells with the mixture.
- Place the stuffed courgettes in a baking dish.
- Bake for 45 minutes, or until the courgettes are tender and the cheese is golden.
- Serve warm or at room temperature on a bed of greens or with mashed potatoes.
