Cheesy Baked Courgettes Recipe
Ingredients:
- 1 medium onion, chopped
- 2 tablespoons olive oil
- Pinch of saffron
- 450 g courgettes, sliced
- 100 g cheddar cheese, grated
- 2 eggs, beaten
- Salt and pepper to taste
Instructions:
- Preheat the oven to 190°C (375°F/Gas Mark 5).
- Heat the olive oil in a pan over low heat.
- Add the chopped onion and cover. Cook for about 10 minutes, stirring occasionally, until softened.
- Stir in the saffron and season with salt and pepper.
- Steam the courgette slices until tender.
- Add the steamed courgettes to the onion mixture and transfer to a baking dish.
- In a bowl, mix the grated cheese with the beaten eggs. Season with salt and pepper.
- Pour the cheese mixture over the vegetables in the baking dish.
- Bake for 20 minutes or until the topping is risen and set.
