Courgette and Potato Gratin Instructions
Servings: 4-6
Ingredients:
- 4 tablespoons olive oil
- 800 g potatoes (very thinly sliced)
- 2 teaspoons fresh thyme (or 1/2 teaspoon dried)
- 1 teaspoon salt
- 450 g courgettes (thinly sliced)
- Pepper to taste
Steps:
- Preheat the oven to 180°C (350°F, gas mark 4).
- Grease a baking dish with 1 teaspoon of olive oil.
- Layer half of the sliced potatoes in the bottom of the dish, overlapping them.
- Sprinkle some thyme and salt over the potatoes, then drizzle with 1 tablespoon of olive oil.
- Add half of the sliced courgettes on top and season again.
- Drizzle with more olive oil.
- Add the second layer of potatoes, followed by the second layer of courgettes, seasoning each layer.
- Finish with a drizzle of olive oil on top.
- Cover the dish and bake for 45 minutes or until the vegetables are tender.
- Remove the cover and bake for an additional 15 minutes.
- Serve warm.
