 Courgette and Potato Gratin Instructions

Servings: 4-6

Ingredients:

  • 4 tablespoons olive oil
  • 800 g potatoes (very thinly sliced)
  • 2 teaspoons fresh thyme (or 1/2 teaspoon dried)
  • 1 teaspoon salt
  • 450 g courgettes (thinly sliced)
  • Pepper to taste

Steps:

  1. Preheat the oven to 180°C (350°F, gas mark 4).
  2. Grease a baking dish with 1 teaspoon of olive oil.
  3. Layer half of the sliced potatoes in the bottom of the dish, overlapping them.
  4. Sprinkle some thyme and salt over the potatoes, then drizzle with 1 tablespoon of olive oil.
  5. Add half of the sliced courgettes on top and season again.
  6. Drizzle with more olive oil.
  7. Add the second layer of potatoes, followed by the second layer of courgettes, seasoning each layer.
  8. Finish with a drizzle of olive oil on top.
  9. Cover the dish and bake for 45 minutes or until the vegetables are tender.
  10. Remove the cover and bake for an additional 15 minutes.
  11. Serve warm.
