Oatmeal Applesauce Muffins Directions
Ingredients:
- 1 1/2 cups oats
- 1 1/4 cups flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 3 tbsp vegetable oil
- 3/4 tsp cinnamon
- 1 cup unsweetened applesauce
- 1/2 cup milk
- 1/2 cup brown sugar (packed)
- 1 egg white (or whole egg)
Optional Topping:
- 1/4 cup oats
- 1 tbsp brown sugar
- 1 tbsp butter (melted)
- 1/8 tsp cinnamon
Instructions:
- Preheat the oven to 400°F.
- In a bowl, mix all dry ingredients: oats, flour, baking powder, baking soda, and cinnamon.
- In a separate bowl, combine all moist ingredients: applesauce, milk, vegetable oil, brown sugar, and egg white.
- Pour the moist mixture into the dry mixture. Stir until just moistened; do not overmix.
- Place paper muffin cups in a muffin pan or lightly spray the pan with oil.
- Fill each cup with the batter.
- If using, mix the optional topping ingredients in a small bowl. Sprinkle on top of the muffins and gently pat down.
- Bake for 20-22 minutes.
- Let cool before serving. Enjoy!
