Oatmeal Applesauce Muffins

 Oatmeal Applesauce Muffins Directions

Ingredients:

  • 1 1/2 cups oats
  • 1 1/4 cups flour
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 3 tbsp vegetable oil
  • 3/4 tsp cinnamon
  • 1 cup unsweetened applesauce
  • 1/2 cup milk
  • 1/2 cup brown sugar (packed)
  • 1 egg white (or whole egg)

Optional Topping:

  • 1/4 cup oats
  • 1 tbsp brown sugar
  • 1 tbsp butter (melted)
  • 1/8 tsp cinnamon

Instructions:

  1. Preheat the oven to 400°F.
  2. In a bowl, mix all dry ingredients: oats, flour, baking powder, baking soda, and cinnamon.
  3. In a separate bowl, combine all moist ingredients: applesauce, milk, vegetable oil, brown sugar, and egg white.
  4. Pour the moist mixture into the dry mixture. Stir until just moistened; do not overmix.
  5. Place paper muffin cups in a muffin pan or lightly spray the pan with oil.
  6. Fill each cup with the batter.
  7. If using, mix the optional topping ingredients in a small bowl. Sprinkle on top of the muffins and gently pat down.
  8. Bake for 20-22 minutes.
  9. Let cool before serving. Enjoy!
