 Potato Pancakes Directions

  1. Gather Ingredients: You will need:

    • 3 cups grated raw potato or 2 cups mashed potatoes
    • 1 tablespoon grated onion (add more if you like)
    • 1/2 cup grated green pepper
    • 2 unbeaten eggs
    • 4 tablespoons flour
    • 1 teaspoon salt
    • Black pepper to taste
    • 1/3 cup mayonnaise
  2. Mix Ingredients: In a large bowl, combine the grated or mashed potatoes, grated onion, grated green pepper, unbeaten eggs, flour, salt, black pepper, and mayonnaise. Stir until well mixed.

  3. Heat Pan: Preheat a non-stick skillet over medium heat.

  4. Cook Pancakes: Scoop about 1/4 cup of the mixture into the skillet for each pancake. Flatten gently with a spatula.

  5. Fry: Cook for 3-4 minutes on each side, or until golden brown.

  6. Serve: Remove from the skillet and serve warm. Enjoy!
