Potato Pancakes Directions
Gather Ingredients: You will need:
- 3 cups grated raw potato or 2 cups mashed potatoes
- 1 tablespoon grated onion (add more if you like)
- 1/2 cup grated green pepper
- 2 unbeaten eggs
- 4 tablespoons flour
- 1 teaspoon salt
- Black pepper to taste
- 1/3 cup mayonnaise
Mix Ingredients: In a large bowl, combine the grated or mashed potatoes, grated onion, grated green pepper, unbeaten eggs, flour, salt, black pepper, and mayonnaise. Stir until well mixed.
Heat Pan: Preheat a non-stick skillet over medium heat.
Cook Pancakes: Scoop about 1/4 cup of the mixture into the skillet for each pancake. Flatten gently with a spatula.
Fry: Cook for 3-4 minutes on each side, or until golden brown.
Serve: Remove from the skillet and serve warm. Enjoy!
