Jollof rice is a West African rice dish, particularly popular in Nigeria and Ghana, characterized by its bold reddish color and flavor. It's made with rice, tomatoes, onions, bell peppers, and a blend of spices, and is often served with meat, fish, or vegetables. The dish is known for its rich, flavorful sauce and distinct, slightly smoky taste.

  1. Prepare Tomatoes:

    1. Boil 3 large tomatoes for 2 minutes.
    2. Immediately transfer them to cold water.
    3. Peel off the skin and mash with a fork.
    4. Mix with 2 tablespoons of tomato paste and set aside.

    Broil Onions:

    1. Brush 1 sliced onion with 1/4 cup of oil.
    2. Broil in the oven for 3 minutes or until brown.

    Make Onion Paste:

    1. Blend the broiled onion slices with 1/2 teaspoon of cayenne pepper until smooth. Set aside.

    Cook Chopped Onion:

    1. In a heavy skillet over medium heat, fry 1 chopped onion in the remaining oil until golden.

    Add Garlic and Meat:

    1. Add 2 cloves of minced garlic and 1 pound of cubed meat.
    2. Stir frequently until the meat is browned on all sides.

    Combine Ingredients:

    1. Reduce heat to simmer.
    2. Stir in the tomato mixture and onion paste.
    3. Add salt, pepper, and 1 cup of water (and vegetables if using).

    Simmer:

    1. Stir well and simmer on low heat for about 45 minutes until the meat is cooked.

    Serve:

    1. Mix with 1 cup of cooked dry rice and enjoy.
