 I need to make this again soon!!! I can taste it now just thinking about it.

Classic Toad in the Hole


 Ingredients

Serves: 4

  • 1 cup plain flour
  • 1 teaspoon salt
  • 2 large eggs (preferably free range)
  • 300ml water, milk, or beer
  • A twist of Black pepper
  • 2 tablespoons cooking oil or lard
  • 6-8 sausages of your choice

Method

  1. Prep Time: 15 minutes
  2. Cook Time: 45 minutes
  3. Total Time: 1 hour

Instructions:

  1. In a large bowl, mix the flour and salt.
  2. Make a hollow in the center and add the eggs.
  3. Gradually add the liquid while mixing. Use a whisk to remove any lumps.
  4. Let the batter stand for as long as possible (overnight in the fridge is best).
  5. Preheat the oven to 428°F (gas mark 7).
  6. Heat the lard or cooking oil in a high-sided roasting tin.
  7. Add the sausages and cook for 10 minutes.
  8. Place the roasting tin over high heat until the fat smokes.
  9. Pour the batter into the hot tin and return to the oven.
  10. Bake for 25-30 minutes, then serve.
