 Blueberry Lemon Crumb Bars Recipe

Ingredients:

  • 1 package (18.25 oz) Yellow Cake Mix
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 can (14 oz) Fat-Free Sweetened Condensed Milk
  • 1/2 cup lemon juice
  • 1 cup white chocolate chips
  • 2 cups fresh or frozen (thawed) blueberries

Directions:

  1. Preheat Oven: Set the oven to 350°F (175°C).
  2. Prepare Pan: Spray the bottom of a 13 x 9 inch pan with non-stick cooking spray.
  3. Mix Base: In a large bowl, combine the cake mix, softened butter, and egg. Use an electric mixer on low speed until blended and crumbly.
  4. Press Mixture: Press half of the crumb mixture evenly into the bottom of the prepared pan.
  5. Bake Base: Bake for 15 minutes.
  6. Make Filling: In a medium bowl, whisk together the condensed milk, lemon juice, and white chocolate chips until blended.
  7. Add Blueberries: Evenly arrange the blueberries over the partially baked crust. Pour the lemon mixture over the blueberries.
  8. Top with Crumble: Sprinkle the remaining crumb mixture over the lemon layer.
  9. Final Bake: Bake for 20-24 minutes, or until the topping is brown.
  10. Cool and Cut: Allow to cool completely, then cut into bars and store in the refrigerator.
