Blueberry Lemon Crumb Bars Recipe
Ingredients:
- 1 package (18.25 oz) Yellow Cake Mix
- 1/2 cup butter, softened
- 1 large egg
- 1 can (14 oz) Fat-Free Sweetened Condensed Milk
- 1/2 cup lemon juice
- 1 cup white chocolate chips
- 2 cups fresh or frozen (thawed) blueberries
Directions:
- Preheat Oven: Set the oven to 350°F (175°C).
- Prepare Pan: Spray the bottom of a 13 x 9 inch pan with non-stick cooking spray.
- Mix Base: In a large bowl, combine the cake mix, softened butter, and egg. Use an electric mixer on low speed until blended and crumbly.
- Press Mixture: Press half of the crumb mixture evenly into the bottom of the prepared pan.
- Bake Base: Bake for 15 minutes.
- Make Filling: In a medium bowl, whisk together the condensed milk, lemon juice, and white chocolate chips until blended.
- Add Blueberries: Evenly arrange the blueberries over the partially baked crust. Pour the lemon mixture over the blueberries.
- Top with Crumble: Sprinkle the remaining crumb mixture over the lemon layer.
- Final Bake: Bake for 20-24 minutes, or until the topping is brown.
- Cool and Cut: Allow to cool completely, then cut into bars and store in the refrigerator.
