Aunty Lila's Egg and Bacon Pie

Gather Ingredients:

  • 6 oz margarine or butter
  • 8-9 oz (2 cups) self-raising flour
  • 4 beaten eggs
  • 1 packet streaky or back bacon (cut up, rinds removed)
  • Salt and pepper
  • Water

Make Pastry:

  1. Mix the margarine and flour together until it resembles breadcrumbs.
  2. Add enough water to form a stiff dough.

Prepare Dish:

  1. Grease a round dish.
  2. Roll out half of the pastry to a thin layer for the bottom of the dish.
  3. Set the remaining pastry aside for the top.

Prepare Filling:

  1. In a bowl, combine the beaten eggs, cut-up bacon, salt, and pepper.
  2. Pour the mixture into the dish on top of the pastry.

Cover the Dish:

  1. Roll out the remaining pastry to a thicker layer.
  2. Place it over the top of the dish.
  3. Flute the edges and make patterns with the leftover pastry.

Bake:

  • Cook in the center of the oven at 180°C (375°F) for approximately 45 minutes.
