Spinach Quiche
Ingredients
- 1 pie crust (I use Pillsbury)
- 3 tablespoons butter
- 1 small onion, chopped
- 1 cup frozen chopped spinach, thawed & drained
- 1 garlic clove, pressed
- 6 eggs
- 1 cup milk
- 2 cups shredded colby-monterey jack cheese
- Salt & pepper
Directions
- Preheat oven to 375°F.
- Press the pie crust into a 9" pie pan.
- Pre-bake the pie crust for 10 minutes, then set aside.
- In a skillet, sauté onion, garlic, and spinach in butter until the onion is soft. Add salt and pepper to taste. Set aside.
- In a medium mixing bowl, whisk together eggs and milk.
- Spread shredded cheese on the bottom of the pre-baked pie crust.
- Layer the spinach mixture over the cheese.
- Pour the egg and milk mixture over the spinach and cheese.
- Bake at 375°F for 35 minutes. If the crust browns too much, cover the edges with tin foil.
- Slice and serve.
