Spinach Quiche

Ingredients

  • 1 pie crust (I use Pillsbury)
  • 3 tablespoons butter
  • 1 small onion, chopped
  • 1 cup frozen chopped spinach, thawed & drained
  • 1 garlic clove, pressed
  • 6 eggs
  • 1 cup milk
  • 2 cups shredded colby-monterey jack cheese
  • Salt & pepper

Directions

  1. Preheat oven to 375°F.
  2. Press the pie crust into a 9" pie pan.
  3. Pre-bake the pie crust for 10 minutes, then set aside.
  4. In a skillet, sauté onion, garlic, and spinach in butter until the onion is soft. Add salt and pepper to taste. Set aside.
  5. In a medium mixing bowl, whisk together eggs and milk.
  6. Spread shredded cheese on the bottom of the pre-baked pie crust.
  7. Layer the spinach mixture over the cheese.
  8. Pour the egg and milk mixture over the spinach and cheese.
  9. Bake at 375°F for 35 minutes. If the crust browns too much, cover the edges with tin foil.
  10. Slice and serve.
