Banana Muffins
Ingredients:
- 2 cups all-purpose flour
- 1 cup white sugar
- 1 cup mashed ripe banana
- 1/2 cup margarine
- 2 eggs
- 6 tablespoons milk
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Directions:
- In a medium bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a separate bowl, cream together margarine and sugar. Add eggs and mix until smooth.
- Stir in milk and mashed banana until well combined.
- Fold the flour mixture into the wet ingredients until just combined.
- Grease muffin tins and fill them two-thirds full with the batter.
- Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes.
