Banana Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1 cup mashed ripe banana
  • 1/2 cup margarine
  • 2 eggs
  • 6 tablespoons milk
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Directions:

  1. In a medium bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  2. In a separate bowl, cream together margarine and sugar. Add eggs and mix until smooth.
  3. Stir in milk and mashed banana until well combined.
  4. Fold the flour mixture into the wet ingredients until just combined.
  5. Grease muffin tins and fill them two-thirds full with the batter.
  6. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes.
