Ingredients

  • ½ lb. extra-lean ground beef
  • 1 large red pepper, chopped
  • 1 large carrot, chopped
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 can (14.5 oz.) no-salt-added diced tomatoes, undrained
  • 1 cup Thick & Chunky Salsa
  • 1 tsp. ground cumin
  • 3 cups macaroni and cheese
  • ½ can (16 oz.) refried beans

Instructions

  1. Preheat Oven: Heat the oven to 400ºF.

  2. Cook Meat: In a large nonstick skillet, brown the ground beef with the chopped red pepper, carrot, onion, and minced garlic.

  3. Add Sauces: Stir in the diced tomatoes, salsa, and cumin. Mix well and cover. Let it simmer for 5 minutes. Remove from heat.

  4. Layer Ingredients:

    • Spread half of the tomato mixture on the bottom of an 8x9-inch baking dish.
    • Add half of the macaroni and cheese.
    • Layer half of the refried beans on top.
    • Add the remaining tomato mixture.
    • Sprinkle ½ cup of cheese on top.
    • Repeat the layers with the remaining macaroni and cheese.
  5. Cover and Bake: Cover the dish with a sheet of foil sprayed with cooking spray. Bake for 35 to 40 minutes, until heated through. Uncover for the last 5 minutes.

  6. Serve: Let it stand for 5 minutes before cutting to serve. Enjoy!
