Ingredients
- ½ lb. extra-lean ground beef
- 1 large red pepper, chopped
- 1 large carrot, chopped
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 can (14.5 oz.) no-salt-added diced tomatoes, undrained
- 1 cup Thick & Chunky Salsa
- 1 tsp. ground cumin
- 3 cups macaroni and cheese
- ½ can (16 oz.) refried beans
Instructions
Preheat Oven: Heat the oven to 400ºF.
Cook Meat: In a large nonstick skillet, brown the ground beef with the chopped red pepper, carrot, onion, and minced garlic.
Add Sauces: Stir in the diced tomatoes, salsa, and cumin. Mix well and cover. Let it simmer for 5 minutes. Remove from heat.
Layer Ingredients:
- Spread half of the tomato mixture on the bottom of an 8x9-inch baking dish.
- Add half of the macaroni and cheese.
- Layer half of the refried beans on top.
- Add the remaining tomato mixture.
- Sprinkle ½ cup of cheese on top.
- Repeat the layers with the remaining macaroni and cheese.
Cover and Bake: Cover the dish with a sheet of foil sprayed with cooking spray. Bake for 35 to 40 minutes, until heated through. Uncover for the last 5 minutes.
Serve: Let it stand for 5 minutes before cutting to serve. Enjoy!
