 Directions for Pesto Pasta with Broccoli and Spinach

  1. Prepare Ingredients: Gather the following:

    • 1 1/2 cups steamed broccoli
    • 1 cup spinach
    • 3 cloves of garlic
    • 4 oz package of goat cheese
    • 1/4 cup basil
    • 2 tablespoons sliced almonds
    • Sea salt and pepper to taste
    • Sundried tomatoes (optional)
  2. Steam Broccoli: Steam the broccoli until it is soft.

  3. Melt Goat Cheese: In a small pot, melt the goat cheese with 1/4 to 1/2 cup of vegetable broth.

  4. Blend Ingredients: In a food processor, add the steamed broccoli, spinach, garlic, melted goat cheese, basil, sliced almonds, sea salt, and pepper. Blend until smooth.

  5. Cook Noodles: Prepare your choice of noodles according to package instructions.

  6. Assemble Dish: Top the cooked noodles with chicken and the blended pesto.

  7. Optional: Add sundried tomatoes for extra flavor.
