Directions for Pesto Pasta with Broccoli and Spinach
Prepare Ingredients: Gather the following:
- 1 1/2 cups steamed broccoli
- 1 cup spinach
- 3 cloves of garlic
- 4 oz package of goat cheese
- 1/4 cup basil
- 2 tablespoons sliced almonds
- Sea salt and pepper to taste
- Sundried tomatoes (optional)
Steam Broccoli: Steam the broccoli until it is soft.
Melt Goat Cheese: In a small pot, melt the goat cheese with 1/4 to 1/2 cup of vegetable broth.
Blend Ingredients: In a food processor, add the steamed broccoli, spinach, garlic, melted goat cheese, basil, sliced almonds, sea salt, and pepper. Blend until smooth.
