White Chili

 Directions for White Chili

  1. Prepare Ingredients:

    • Cut 3 skinless, boneless chicken breast halves into small pieces (or use a large can of shredded chicken).
    • Chop 1 large onion.
    • Mince 1 tablespoon of garlic.
  2. Cook Chicken:

    • Heat 1 teaspoon of olive oil in a large pot.
    • Add the chicken pieces and cook until browned.
  3. Add Vegetables and Beans:

    • Stir in the chopped onion and minced garlic.
    • Add 1 can (15 oz) of rinsed and drained Great Northern White Beans.
    • Add 1 can (19 oz) of rinsed and drained cannellini beans.
    • Add 1 can (4.5 oz) of chopped green chiles.
  4. Season:

    • Mix in 1.5 teaspoons of ground cumin.
    • Add 1 teaspoon of black pepper.
    • Stir in 1/8 teaspoon of cayenne pepper.
  5. Add Broth:

    • Pour in 1.75 cups (or 14.5 oz can) of chicken broth.
  6. Simmer:

    • Bring the mixture to a simmer.
    • Simmer for at least 20 minutes (longer for a mushier texture, especially if using dry-soaked beans).
  7. Thicken:

    • If desired, thicken with cornstarch.
  8. Garnish:

    • Serve with sour cream and jack cheese on top.
    • Optionally, mix in 1/2 cup of sour cream into the pot before serving.
  9. Serve:

    • Enjoy your chili! Adjust toppings to personal preference.
