Directions for White Chili
Prepare Ingredients:
- Cut 3 skinless, boneless chicken breast halves into small pieces (or use a large can of shredded chicken).
- Chop 1 large onion.
- Mince 1 tablespoon of garlic.
Cook Chicken:
- Heat 1 teaspoon of olive oil in a large pot.
- Add the chicken pieces and cook until browned.
Add Vegetables and Beans:
- Stir in the chopped onion and minced garlic.
- Add 1 can (15 oz) of rinsed and drained Great Northern White Beans.
- Add 1 can (19 oz) of rinsed and drained cannellini beans.
- Add 1 can (4.5 oz) of chopped green chiles.
Season:
- Mix in 1.5 teaspoons of ground cumin.
- Add 1 teaspoon of black pepper.
- Stir in 1/8 teaspoon of cayenne pepper.
Add Broth:
- Pour in 1.75 cups (or 14.5 oz can) of chicken broth.
Simmer:
- Bring the mixture to a simmer.
- Simmer for at least 20 minutes (longer for a mushier texture, especially if using dry-soaked beans).
Thicken:
- If desired, thicken with cornstarch.
Garnish:
- Serve with sour cream and jack cheese on top.
- Optionally, mix in 1/2 cup of sour cream into the pot before serving.
Serve:
