Honey Lime Quinoa Fruit Salad

Serves: 4-6
Ingredients:
- 1 cup uncooked quinoa (tricolor preferred)
- 1½ cups strawberries, sliced
- 1 cup blackberries
- 1 cup blueberries
- 1 mango, diced
Honey Lime Glaze:
- ¼ cup honey
- 2 tablespoons lime juice
- 1 tablespoon chopped basil (for garnish)
Instructions:
- Rinse and prepare the quinoa according to the package directions. Let it cool to room temperature.
- In a large bowl, combine the cooled quinoa, strawberries, blueberries, and diced mango.
- In a small bowl, mix the honey and lime juice to create the glaze.
- Drizzle the honey lime glaze over the fruit salad and gently toss to coat the fruit evenly.
- Garnish with chopped basil before serving.
