 Honey Lime Quinoa Fruit Salad

Ingredients:

  • 1 cup uncooked quinoa (tricolor preferred)
  • 1½ cups strawberries, sliced
  • 1 cup blackberries
  • 1 cup blueberries
  • 1 mango, diced

Honey Lime Glaze:

  • ¼ cup honey
  • 2 tablespoons lime juice
  • 1 tablespoon chopped basil (for garnish)

Instructions:

  1. Rinse and prepare the quinoa according to the package directions. Let it cool to room temperature.
  2. In a large bowl, combine the cooled quinoa, strawberries, blueberries, and diced mango.
  3. In a small bowl, mix the honey and lime juice to create the glaze.
  4. Drizzle the honey lime glaze over the fruit salad and gently toss to coat the fruit evenly.
  5. Garnish with chopped basil before serving.
