Sweet Potato Casserole

 Sweet Potato Casserole - 8 Servings

Ingredients:

  • 5 sweet potatoes, peeled and sliced
  • ½ cup packed brown sugar
  • ½ cup butter
  • 2 Tbsp orange juice
  • 2 pinches cinnamon
  • 1 (10.5 oz) package mini marshmallows

Directions:

  1. Preheat the oven to 350°F.
  2. Boil the sliced sweet potatoes until tender, then drain.
  3. In a large bowl, blend the potatoes until creamy. Add the butter, brown sugar, orange juice, and cinnamon, and mix well.
  4. Spread the mixture in a 9x13 inch pan.
  5. Sprinkle mini marshmallows on top.
  6. Bake until golden brown.
