Sweet Potato Casserole - 8 Servings
Ingredients:
- 5 sweet potatoes, peeled and sliced
- ½ cup packed brown sugar
- ½ cup butter
- 2 Tbsp orange juice
- 2 pinches cinnamon
- 1 (10.5 oz) package mini marshmallows
Directions:
- Preheat the oven to 350°F.
- Boil the sliced sweet potatoes until tender, then drain.
- In a large bowl, blend the potatoes until creamy. Add the butter, brown sugar, orange juice, and cinnamon, and mix well.
- Spread the mixture in a 9x13 inch pan.
- Sprinkle mini marshmallows on top.
- Bake until golden brown.
