 Biscuits Preparation Directions

  1. Gather Ingredients:

    • 2 cups all-purpose flour (plus extra for dusting)
    • 2 tablespoons baking powder
    • 1 scant tablespoon sugar
    • 1 teaspoon salt
    • 5 tablespoons cold, unsalted butter
    • 1 cup whole milk
  2. Preheat Oven:

    • Set the oven to 425°F.
  3. Mix Dry Ingredients:

    • Sift together flour, baking powder, sugar, and salt in a large mixing bowl.
  4. Process Butter:

    • Transfer the mixture to a food processor. Cut butter into small pieces, add to the flour, and pulse 5-6 times until it looks like rough crumbs.
    • Alternative: Cut butter into the flour in the mixing bowl using a fork or pastry cutter.
  5. Form Dough:

    • Return the mixture to the bowl, add milk, and stir with a fork until it forms a rough ball.
  6. Knead Dough:

    • Turn the dough onto a floured surface and pat it into a rectangle about 1 inch thick.
    • Fold it over and gently pat it down again. Repeat this step.
  7. Rest Dough:

    • Cover the dough loosely with a kitchen towel and let it rest for 30 minutes.
  8. Shape Biscuits:

    • Pat the dough into a rectangle roughly 10 inches by 6 inches.
    • Use a floured glass or biscuit cutter to cut out biscuits. Do not twist the cutter.
  9. Bake:

    • Place biscuits on a cookie sheet and bake for 10-15 minutes until golden brown.
