Parmesan Tilapia

 Ingredients:

  • 3/4 cup freshly grated Parmesan cheese
  • 2 teaspoons paprika
  • 1 tablespoon chopped flat-leaf parsley
  • 4 tilapia fillets (about 1 pound total)
  • 1 lemon, cut into wedges
  • Olive oil
  • Salt and pepper

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow dish, mix the Parmesan cheese, paprika, parsley, salt, and pepper.
  3. Drizzle olive oil over the tilapia fillets.
  4. Dredge each fillet in the cheese mixture until coated.
  5. Place the coated fillets on a foil-lined baking sheet.
  6. Bake for 10 to 12 minutes, or until the fish is opaque in the thickest part.
  7. Serve the fish with lemon wedges.
