 Sweet Potato Soufflé

  1. Preheat the oven to 300°F.
  2. In a large bowl, combine:
    • 1 large can of sweet potatoes (1 lb. 13 oz.)
    • 1 1/2 cups sugar
    • 2 eggs
    • 3/4 stick of softened butter
    • 1 cup milk
    • 1/4 teaspoon nutmeg
    • 1/2 teaspoon cinnamon
  3. Mix all ingredients using an electric mixer until smooth.
  4. Pour the mixture into a baking dish.
  5. Bake for 35 to 45 minutes, or until almost firm.
  6. Add your desired topping during the last 15 minutes of baking. Enjoy!
