Fresh Tomato Tart

Ingredients

  • 1 store-bought or homemade dough for tart shell
  • 8 to 10 ounces mozzarella cheese, shredded
  • 2 tablespoons chopped fresh basil, plus extra for garnish
  • 4 to 6 plum tomatoes, sliced 1/4-inch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup extra virgin olive oil
  • Chopped basil for garnish

Directions

  1. Preheat the Oven: Preheat to 400°F.
  2. Prepare Tart Pan: Line a loose-bottom tart pan with dough rolled out to 1/8-inch thick.
  3. Add Cheese: Spread shredded mozzarella cheese evenly on the bottom of the pastry.
  4. Add Basil: Sprinkle 2 tablespoons of chopped basil over the cheese.
  5. Layer Tomatoes: Arrange tomato slices on top, covering as evenly as possible.
  6. Season: Sprinkle tomatoes with salt and black pepper, then drizzle with olive oil.
  7. Bake: Place in the oven and bake for 20 to 30 minutes. Watch carefully until the crust is golden and cheese is bubbly.
  8. Serve: Remove from oven, garnish with fresh basil, slice into wedges, and serve warm.
