Zucchini Fritters Recipe

Ingredients:
- 1 1/2 pounds zucchini, grated
- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup crumbled feta
- 2 cloves garlic, minced
- 1 large egg, beaten
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons minced fresh dill
Instructions:
Prepare Zucchini:
- Place grated zucchini in a colander over the sink.
- Add 1 teaspoon salt and mix gently.
- Let sit for 10 minutes, then drain using a cloth or paper towels.
Mix Ingredients:
- In a large bowl, combine drained zucchini, flour, feta, dill, garlic, and beaten egg.
- Season with salt and pepper to taste.
Cook Fritters:
- Heat olive oil in a large skillet over medium-high heat.
- Scoop a tablespoon of batter for each fritter into the skillet.
- Flatten slightly with a spatula.
- Cook for about 2 minutes until golden-brown, then flip and cook the other side for 1-2 minutes until golden-brown.
Serve:
- Enjoy with sour cream, yogurt, sauce, or plain.
